Chop fruit and nuts, dredge with 1/4 cup
of flour. Cream butter and sugar together until
light and fluffy, add eggs one at a time, beating
well after each one. Combine flour and baking
powder, mix into butter mixture, stir in vanilla,
lemon extract and fruit and nuts.
Grease a 10-tube pan or 2 loaf pans, pour
batter into prepared pan. Place in cold
oven and bake at 250° for 2 hours
if using a tube pan and 1 hour
and 30 minutes for loaf pans.
Check cakes as baking times
vary. Cool in pan.
