cups baby arugula
cups snap peas
head fennel, thinly sliced

radishes, thinly sliced
grapefruits, cut into segments
tbsp. fresh mint leaves
tbsp. lemon herb vinaigrette
tbsp. feta, crumbled
Combine arugula, peas, fennel, radish,
grapefruit and mint in a large salad
bowl. Pour vinaigrette over salad, toss
to combine.
2. Divide mixture between plates and
garnish with feta.
apricot glazed ham
PREP 10 mins. COOK 2 hrs.
TOTAL 2 hrs. 10 mins. SERVES 8
1 spiral ham
1/3 cup brown
sugar
1 (9 oz.) jar organic
apricot jam
2 tbsp. Dijon
mustard
1/8 tsp. ground
clove
½ tsp. cinnamon
1. Preheat oven to 275°F. Place ham cut
side down in roasting pan, cover with
foil. Bake for 45 minutes.
2. While ham is baking combine sugar,
apricot jam, mustard, cloves and
cinnamon in a small pot. Warm over
low heat.
3. Brush 1/3 of glaze over ham, cover
and bake for another 45 minutes.
4. Remove foil, glaze ham with another
1/3 of glaze, increase oven
temperature
to 450°F and bake for 30 minutes.
5. Remove ham from oven and pour
remaining glaze over it. Allow ham to
rest for 15 minutes before serving.
