sweet potato orange cups
PREP 20 mins. COOK 25 mins. TOTAL 45 mins. SERVES 6
3 large sweet potatoes
navel oranges

3 tbsp. orange juice
2
tbsp. butter

cup heavy cream

Wash sweet potatoes thoroughly,
pat dry and pierce 3-4 times with al
fork. Place on microwave-safe plate
and microwave for 5-10 minutes,
turning halfway through. Potatoes
are done when a fork can easily
pierce them. Let cool slightly.
2. Preheat oven to 350°F. Cut oranges
in half. Remove pulp, leaving a
shell. Save 3 tablespoons of juice,
then discard pulp or save for
another use. Cut the bottom of
the cups so they sit flat.

1 cup mini marshmallows
1/4 cup chopped pecans, toasted

3. When potatoes have cooled,
scoop out the insides into a large
bowl. Add the orange juice, butter,
cream, brown sugar and salt. Mash
until smooth.

Spoon sweet potato mixture into
shells. Place marshmallows on top
of each cup.
Place on a parchment-lined
baking pan. Bake until heated
through, about 20 minutes or until
marshmallows start to turn brown.
Top with toasted pecans and serve.
