white rice

tbsp. chopped cilantro
lime, cut into wedges

3 tbsp. Ya Mon jerk style

2. In a large bowl, combine shrimp, pineapple, onion,
bell pepper and jerk marinade. Stir to fully coat with
sauce.
3. Pour onto prepared sheet tray.
4. Bake in oven for 15 minutes, or until shrimp is fully
cooked and vegetables begin to brown around the
edges.
5. In a medium pot with a lid, heat 1 can coconut milk
plus half a cup of water. When water begins to boil, add
the rice, turn down heat to a simmer and cover with lid.
