To Make Syrup: Whisk juice and corn starch in small saucepan until blended. Add syrup, cinnamon and
nutmeg. Bring to a boil over medium-high heat. Reduce heat to low, cook 2 minutes, stirring
occasionally. To Make Pancakes: Heat griddle to 350°F. Stir flour, brown sugar, baking soda, salt,
cinnamon and nutmeg in large bowl until blended. Add juice, apple sauce, eggs and 2 tablespoons butter;
stir just until combined. Brush griddle with remaining butter. Pour 1/4 cup batter onto hot griddle for
each pancake. Cook about 2 minutes per side or until golden. Serve with syrup.
