Hard cheese
Hard cheeses include cheddar,
manchego and Parmigiano-Reggiano.
Known as the king of cheese, ParmigianoReggiano is named after the Italian
towns of Parma and Reggio Emilia,
where it has been made for thousands of
years and are the only places today where
this cheese can still be made. The recipe,
first formulated by Benedictine monks in
the Middle Ages, has been perfected
through time and is protected by law to
ensure that each piece of ParmigianoReggiano meets the rigorous standards
developed and maintained throughout
history. When aged a minimum requirement of 24 months, ParmigianoReggiano will have a fruity, nutty flavor.
Grate this cheese onto pasta, salads or
soups. Chunk and serve with fruits, such
as pears. Use the rind when cooking to
add a burst of umami to stews and stocks.
Parmigiano-Reggiano should be
stored in the refrigerator in a plastic or
glass container with a lid or wrapped
tightly in plastic wrap.
Blue cheese
In addition to a sticky or crusty rind,
blue cheese, which is made from cow,
sheep or goat milk, can easily be identified by the blue veins throughout the
cheese. Gorgonzola, Cambozola, Stilton
and Roquefort are prime examples.
In addition to making tasty salad
dressing, blue cheese can be sprinkled
on arugula salads or stuffed into baked
pears. Top steaks with blue cheese when
they are almost done, or crumble it into
ground beef before forming a patty to
give your burgers a salty tang.
Store blue cheese in its original packaging or aluminum foil for up to two
weeks in the refrigerator’s fruit tray.

In addition to its unique flavor, Jarlsberg
is a perfect companion to most herbs and

Jarlsberg should be stored in the
refrigerator out of its original packaging
and wrapped in parchment/cheese paper
or plastic wrap to maintain its freshness
up to two weeks after opening.
21 oz Kirkland Signature
Double Cream Brie
2 cups whole cranberries, rinsed
1/2 cup water
1/2 cup sugar
1 small chipotle, seeded and minced
2 Tbsp honey
1 lemon, zested
Preheat the oven to 375 F. Place
the brie on a parchment-lined baking
sheet and bake in the preheated
oven for 12 to 15 minutes, until soft.
Meanwhile, place the cranberries,
water, sugar and chipotle in a med‑
ium saucepan and bring to a boil over
medium-high heat. Turn the heat
down to medium-low and simmer
for 10 minutes, until the berries have
softened and the sauce is thick.
Top the baked brie with the honey,
followed by the cranberry mixture
and lemon zest. Serve with an
assortment of nuts, bread and sliced
apples for dipping. Makes 12 to 16
appetizer servings.
