1½ to 2 cups butternut squash, cubed
3 Tbsp olive oil
½ tsp salt
½ tsp cinnamon
3 Tanimura & Antle Artisan® romaine heads, chopped
½ cup pomegranate arils
¼ cup chopped walnuts
Goat cheese crumbles (optional)
DRESSING
Juice of 1 lemon
Juice of 2 tangerines
¾ cup olive oil
1 garlic clove, minced
1 Tbsp Dijon mustard
1 Tbsp honey
Salt and pepper, to taste
Prepare squash: Preheat oven to 350 F. Toss the squash
cubes with olive oil, salt and cinnamon, then spread on
baking sheet. Roast in the oven for 15 to 20 minutes; cool.
Prepare salad: Toss chopped Artisan romaine with roasted squash,
pomegranate arils, walnuts and goat cheese in a salad bowl.
Prepare dressing: Mix all dressing ingredients in a jar or small bowl.
Drizzle salad with dressing and serve. Makes 4 to 6 servings.
