ORGANIC AVOCADO RANCH CHOPPED KIT
WITH CHICKEN SKEWERS
Taylor Farms
8 bamboo skewers
4 boneless, skinless organic chicken breasts (approximately 2 lb),
cut into 1-inch cubes
1/3 cup olive oil
1 tsp each ground cumin and chili powder
Salt and pepper to taste
1 (22.6 oz) package Taylor Farms Organic Avocado Ranch
Chopped Kit
½ cup chopped cilantro
Soak skewers in water for 20 to 30 minutes. Thread 4 or 5 chicken
pieces onto each skewer. Whisk together oil, cumin, chili powder
and salt and pepper; brush mixture onto chicken.
Heat a grill or heavy-bottomed pan over medium-high heat. Grill
chicken about 5 minutes per side until chicken has char marks and is
cooked through (recommended internal temperature is 165 F).
Garnish chicken with cilantro.
In a large bowl, toss all chopped salad kit components with half
of the dressing. Serve chicken skewers with the salad. Use the
remainder of the dressing for dipping. Makes 4 servings.
