SEGMENTING
For membrane-free pieces of fruit, you'll
want to segment your citrus. Using a sharp
knife, remove the top and bottom of the
fruit. Sit the fruit flat on a chopping board.
Slice off the peel and pith. Then, cut along
each side of the membrane to remove the
segments. Hold the fruit over a bowl during
this last step to catch any juice.

If you don't have a citrus knife, choose one
with a serrated blade to easily cut through
the hard peel.
