Bubbles are grand any time of year yet are certainly
fitting when celebrating the important women in our
lives. Veuve Ambal is a specialty producer situated
in the heart of Burgundy. They produce a wide range
sparkling wines from grapes produced throughout the
region, primarily Chardonnay and Pinot Noir. Using
the Traditional Method (Methode Champenoise) it is
fermented in the bottle rather than transferred from
a larger vessel. This creates a more complex and
satisfying style, yet at no small expense. The process
is long and a bit arduous to say the least. Bright red
fruits of strawberry, raspberry, notes of citrus, subtle
notes of vanilla and a touch of spice in the lively, crisp
finish.

The non-vintage Louis de Sacy Grand Cru Brut
hails from the Champagne AOC of Verzy and is a
blend of Pinot Noir and Chardonnay from the estate
vineyard in Verzy that are classified as Grand Cru.
It begins with a beautiful golden robe and very
fine bubbles that release subtle and well-balanced
aromas of red fruits, citrus, spices, herbs, and
toasted bread. It is particularly rich and fresh
on the palate with good length, minerality, and
vinosity.
Aging: Minimum of 24 months prior to
disgorgement with some wood fermentation, this is
a particularly rich wine. The wood gives roundness
and extra richness that is balanced by the mineral
and taut texture. The fruit is less important than
the texture, a background of crisp apples and tight
acidity.
